Blueberry Golden Nugget Mandarin
Marmalades don’t have to be all citrus! I love the late season mandarin called Golden Nugget. Super reliably delightful, but mandarins typically peel easily and their insides don’t adhere super well to the skin which means they aren’t great for chipping or turning into texture inside a traditional jelly/shred marmalade formula. In this flavor, blueberries are the body and the texture is chopped up inside segments of the mandarin alongside the zest lovingly microplaned off of every mandarin. You’ll see habanero in the ingredients list but don’t let that alarm you! This isn’t a spicy jam. Blueberries when jammed typically require some zhuzh-ing. Usually we do this with lots of lemon juice, but here we used the pepper to put a little point and pop on the fruit (sort of how peppercorns operate in chai or in our pear lemon sage white pepper marmalade). This one is super textured.
